Ground from a hard white spring wheat, this flour has a lighter appearance and less tannic flavor than flours ground from red wheat. With a protein of 13%, this high protein flour is ideal for incorporating into your sourdough bread, bagels, pizza dough, rolls and enriched doughs like brioche and challah.
